One reason is that they are rich in two antioxidants called lutein and zeaxanthin \u2014 both of which are important for the proper functionality of our macula: the small area at the center of the retina responsible for what we see at the center of our field of vision.<\/p>\n<p style=\"font-weight: 400;\">What many people don\u2019t know is that egg yolks are\u00a0<em>also<\/em>\u00a0an excellent source of lutein and zeaxanthin. In one study, researchers found that lutein levels increased by 26%, while zeaxanthin levels increased by 38% when subjects ate one egg per day. This simple recipe is rich in lutein and zeaxanthin with both egg\u00a0<em>and<\/em>\u00a0leafy greens.<\/p>\n<p style=\"font-weight: 400;\">Because they\u2019re baked in muffin tins, these little frittatas are as cute as they are nutritious. Plus, you can make a whole slew of them at once to please a small crowd!<\/p>\n<h3 style=\"font-weight: 400;\">INGREDIENTS<\/h3>\n<ul>\n<li style=\"font-weight: 400;\">1 Cup chopped onion, adjust to taste<\/li>\n<li style=\"font-weight: 400;\">1 Cup chopped bell pepper, adjust to taste (hint: mix dark red and green for holiday flair)<\/li>\n<li style=\"font-weight: 400;\">10 oz. package frozen chopped spinach, thawed and drained of all liquid<\/li>\n<li style=\"font-weight: 400;\">One dozen medium eggs<\/li>\n<li style=\"font-weight: 400;\">2 ounces grated sharp white cheddar cheese (Feta works well too)<\/li>\n<li style=\"font-weight: 400;\">Cooking Spray<\/li>\n<li style=\"font-weight: 400;\">Salt and Pepper<\/li>\n<\/ul>\n<h3 style=\"font-weight: 400;\">DIRECTIONS<\/h3>\n<ol style=\"font-weight: 400;\">\n<li>Preheat oven to 350 degrees.<\/li>\n<li>Lightly coat a skillet with cooking spray, then saut\u00e9 onions and bell peppers over medium heat for 4-5 minutes or until soft.<\/li>\n<li>Beat eggs in a medium bowl; salt and pepper to taste.<\/li>\n<li>Add onion, bell peppers, spinach and cheese to beaten eggs, mixing well to distribute the spinach throughout.<\/li>\n<li>Spray muffin tins with cooking spray.<\/li>\n<li>Fill each muffin cup approximately \u2154 of the way full of egg mixture.<\/li>\n<li>Bake for about 20 minutes \u2014 just until eggs are \u201cset\u201d or begin to get golden on top.<\/li>\n<\/ol>\n<p style=\"font-weight: 400; padding-left: 30px;\">(Makes 12 frittatas, serving six people at two frittatas per person.)<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Most of us are aware that spinach and other dark, leafy greens are known to be healthy for our bodies, but many of us are not quite sure why.
